Ingredients

  • 2 lb flank steak salt and pepper to taste
  • 2 Tbsp. green pepper minced
  • 2 Tbsp. onion minced
  • 1 Tbsp. tomato paste
  • 1/2 tsp prepared horseradish
  • 1/4 tsp sugar
  • 1/2 c. water
  • 2 c. stuffing mix herb-seasoned
  • 1/4 c. cool water
  • 2 tsp cornstarch
  • 1 Tbsp. tomato paste

Directions

  1. Score one side of meat. Sprinkle with salt and pepper. Combine green pepper, onion, one Tbsp. tomato paste, horseradish, sugar, 1/2 c. water and stuffing.
  2. Spoon stuffing mix down the middle of unscored side of flank steak. Fold ends over and overlap long sides; skewer together. Place on metal rack or possibly trivet in slow cooker. Cover and cook on Low for 8-10 hrs.
  3. Remove meat. Turn control to High. Dissolve cornstarch in 1/4 c. cool water; stir in one Tbsp. tomato paste. Add in to juices in pot. Cook on High for 15-20 min or possibly till slightly thickened. Slice steak across the grain.
  4. Pass sauce with the steak.
