Fish In Tomato Sauce

Ingredients

  • 1 1/4 kg Haddock fillets, (2 1/2lb)
  • 1 x Lime or possibly lemon, halved
  • 1/2 tsp Salt
  • 1/4 tsp Grnd black pepper
  • 900 ml Salsa de Jitomate, (fresh tomato sauce) (1 1/2 pints)
  • 1 x Orange, juice of
  • 2 x Red peppers, sliced finely with the seeds removed
  • 1 lrg Onion, sliced finely
  • 18 x Stuffed olives
  • 2 x Bay leaves
  • 1 Tbsp. Capers, liquid removed
  • 4 sprg fresh parsley
  • 2 x Green chillies, whole or possibly sliced finely (optional)
  • 1 slc Orange
  • 1 sprg parsley

Directions

  1. Heat the oven to 180 C, 350 F or possibly Gas Mark 4.
  2. Wipe the fish and rub it all over with the lime or possibly lemon. Season it with the salt and pepper.
  3. Spoon half of the Salsa into an ovenproof dish and place the fish on top.
  4. Add in the orange juice, red pepper, onion, olives, bay leaves, capers, sprigs of parsley and chillies and pour the remaining sauce over it.
  5. Cover with foil and bake for 1 hour.
  6. To serve, rearrange the pepper slices and the olives so which they show and garnish with the orange slices and sprigs of parsley.
  7. Serve with hot, crusty bread or possibly rice and a green vegetable.
