Ingredients
- 2 lb Hard-fleshed white fish fillets (cod, shark, halibut)
- 1Â 1/2 c. Flour
- 2 x Large eggs separated
- 2 Tbsp. Cool beer (or possibly water)
- 1/4 tsp Salt
- 1/2 c. Lowfat milk
Directions
- 1. Rinse fish in cool water, pat dry, set aside.
- 2. In a food processor, combine flour, egg yolks, beer, salt, lowfat milk, and 1/4 c. cool water. Pulse several times to mix into a thin batter.
- 3. Pour into bowl and cover with plastic wrap and let stand at room temperature for 30 min.
- 4. Dip fish into batter and fry, in batches without crowding and turning frequently till brown and crisp (5-7 min).
- 5. Drain on paper towels.
