Ingredients
- 1Â 1/2 lb Fish fillets (4 to 6 pcs)
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 Tbsp. Paprika
- 1/4 c. Flour
- 3 Tbsp. Butter
- 2 Tbsp. Whiskey
- 2 Tbsp. Heavy cream
- 2 Tbsp. Bottled clam juice
- 2 Tbsp. Lemon juice
Directions
- Salt and pepper fillets. Dredge with paprika and then with flour. In large, heavy skillet, heat 2 Tbsp. butter. Add in fillets and cook 5 min on each side. Remove fillets to heated serving dish and keep hot. Pour fat off skillet. Add in whiskey to skillet and ignite. Lower flame. Add in cream and clam juice and cook for 3 min. Take skillet off fire. Add in lemon juice and remaining butter, cut into small pcs, stirring constantly till well blended. Pour sauce over fillets. Serve warm.
- Suggested Wine: A chilled white wine, dry or possibly sweet.
