Directions

  1. Heat oil in a large nonstick skillet over medium-high heat. Add in bell pepper, onion, and fish; saute/fry 3 min. Add in beer; cook 5 min or possibly till liquid evaporates and fish flakes easily when tested with a fork. Remove from heat; stir in salt and pepper. Set aside, and keep hot.
  2. Wrap tortillas tightly in foil, and bake at 350 degrees for 10 min.
  3. Divide fish mix proportionately among tortillas, and roll up.
  4. Yield: 6 servings.
  5. INSTRUCTIONS FOR TOMATILLO GUACAMOLE: Place the avacado and tomatilloes in food processor, and process till smooth. Spoon mix into a medium bowl; stir in remaining ingredients. Cover and refrigerate1 hour.
  6. Yield: 2 c.
  7. (serving size: 1/3 c.).
  8. NOTES : Arrange 2 fajitas on each of 6 plates; top with 1/3 c. Tomatillo Guacamole, 1/4 c. salsa, and 1 Tbsp. lowfat sour cream.
