Ingredients

  • 1 c. finely rolled soda cracker crumbs
  • 1 c. finely rolled town cracker crumbs
  • 1 c. fine bread crumbs
  • 4 T biscuit mix or possibly cake flour
  • Salt and pepper
  • 1 egg
  • 1/2 c. lowfat milk

Directions

  1. Place all dry ingredients in plastic bag and mix well. Beat egg and lowfat milk together, very thin mix.Dry fillets. Drop fillet in dry mix; shake off excess crumbs. Dip in egg mix, then again in crumbs, shaking off excess. Drop in deep hot fat; fish should float. (Fat is hot sufficient when you drop a pinch of crumbs in fat and it skitters around on top of fat.)
  2. Fry only till very light brown; they fry very fast. Drain on paper towel and serve hot.
