Filipino Minestrone Recipe

  • 3 tbsp of butter
  • 1 pc of medium onion, chopped
  • 150 g chicken breast, deboned, and sliced
  • 2 pcs chicken cubes
  • 100 g squash, diced
  • 1 cup cooked red kidney beans
  • 1 pouch Del Monte Filipino Style tomato sauce (200g)
  • 1 pc small red bell pepper, diced
  • 3/4 cup of elbow macaroni pasta (del monte)
  • 100 g pechay tagalog, shredded
  • 2 tsp cornstarch, dissolved in 1 tbsp water

Directions

  1. Saute onion in butter for 2mins. Add chicken, chicken cubes, squash and kidney beans. Cook with constant stirring for 5 minutes. Add Del Monte tomato sauce, red bell pepper, 4 cups of water, 1/4 tsp iodized fine salt (or 3/4 tsp iodized rock salt) and 1/4 tsp pepper. Simmer for 5 minutes stirring occasionally. Add del monte elbow macaroni. Simmer for another 10mins. Add pechay and cornstarch, let it simmer until thick.

    Lidy; this soup recipe looks pretty darn good, and I am looking forward to trying it. What is pechay tagalog? I googled it, but it gave varying answers. Is it like bok choy, suey choy, squash? Help please lol!!
