Minestrone is a thick soup that contains vegetables and pasta or noodles.
Ingredients
- 3 tbsp of butter
- 1 pc of medium onion, chopped
- 150 g chicken breast, deboned, and sliced
- 2 pcs chicken cubes
- 100 g squash, diced
- 1 cup cooked red kidney beans
- 1 pouch Del Monte Filipino Style tomato sauce (200g)
- 1 pc small red bell pepper, diced
- 3/4 cup of elbow macaroni pasta (del monte)
- 100 g pechay tagalog, shredded
- 2 tsp cornstarch, dissolved in 1 tbsp water
Directions
- Saute onion in butter for 2mins. Add chicken, chicken cubes, squash and kidney beans. Cook with constant stirring for 5 minutes. Add Del Monte tomato sauce, red bell pepper, 4 cups of water, 1/4 tsp iodized fine salt (or 3/4 tsp iodized rock salt) and 1/4 tsp pepper. Simmer for 5 minutes stirring occasionally. Add del monte elbow macaroni. Simmer for another 10mins. Add pechay and cornstarch, let it simmer until thick.
