Fig Preserves Recipe

Ingredients

  • 6 quart figs
  • 8 c. sugar
  • 2 x lemons - (to 3) thinly sliced
  • 6 quart boiling water (for peeling figs)

Directions

  1. Wash, peel, and remove stems from hard ripe figs. To peel, cover with boiling water. Let stand 5 min. Drain, rinse in cool water and pull off peeling.
  2. Mix the sugar and 3 qts water. Boil till sugar is dissolved. Add in lemon slices; boil rapidly 10 min. Lemon slices may be removed.
  3. Add in figs, a few at a time, to the syrup so as not to stop the boiling. Cook till clear. Let stand to plump up. Pack figs into jars. Heat syrup to boiling and pour over figs. Adjust lids.
  4. Process in boiling water for 5 min. Remove jars; cold and store.
  5. This recipe yields 5 pints.
  6. Yield: 5 pints
