Have a couple of figs kicking around?This is a great little marmalade to have as a topping for crostini and goat cheese.
Ingredients
- 1 tbsp.Olive oil
- 2 figs,chopped
- 1/8 c. onion,chopped
- 1 tsp. sugar
- 1/2 tsp. pepper (I use medium heat chimayo powder)
- 1/4 c. orange juice
- 1 tbsp. balsamic vinegar
Directions
- Small frying pan,heat oilve oil
- Saute onion 4-5 min on med.heat until translucent
- Add figs,saute 2 min
- Add sugar and pepper,saute 2 min
- Add orange juice and bubble at a low boil until thick and syrupy (thanks mostly to the sugar!)
- Remove from heat and stir in balsamic vinegar
- A great make-ahead appy.Just cool,cover and pop in fridge until ready to serve as a side to cheese
