Ingredients

  • 4 slc ham (about 1/2 lb.)
  • 8 ounce dry fettuccine
  • 2 Tbsp. extra virgin olive oil
  • 1 x clove garlic, peeled, chopped
  • 1 c. coarsely minced fresh tomato (2 medium tomatoes) Salt and pepper to taste
  • 1 c. fresh or possibly frzn peas
  • 1 Tbsp. , or possibly more to taste, prepared pesto
  • 1/4 c. shaved or possibly grated parmesan cheese

Directions

  1. Cut the ham into 1/4 inch-wide strips and set aside.
  2. Bring a large pot of water to a boil; add in the fettuccine and cook according to package directions. Drain well.
  3. Meanwhile, in a large saucepan, heat the oil over medium heat. Add in the garlic and cook 1 minute. Add in the ham and tomato. Season the mix with salt and pepper. Simmer the mix, uncovered, about 5 min.
  4. Stir in the peas and pesto and cook about 2 min.
  5. Add in the liquid removed fettuccine and toss to coat. Sprinkle with the cheese and serve.
