Ingredients
- 4 slc ham (about 1/2 lb.)
- 8 ounce dry fettuccine
- 2 Tbsp. extra virgin olive oil
- 1 x clove garlic, peeled, chopped
- 1 c. coarsely minced fresh tomato (2 medium tomatoes) Salt and pepper to taste
- 1 c. fresh or possibly frzn peas
- 1 Tbsp. , or possibly more to taste, prepared pesto
- 1/4 c. shaved or possibly grated parmesan cheese
Directions
- Cut the ham into 1/4 inch-wide strips and set aside.
- Bring a large pot of water to a boil; add in the fettuccine and cook according to package directions. Drain well.
- Meanwhile, in a large saucepan, heat the oil over medium heat. Add in the garlic and cook 1 minute. Add in the ham and tomato. Season the mix with salt and pepper. Simmer the mix, uncovered, about 5 min.
- Stir in the peas and pesto and cook about 2 min.
- Add in the liquid removed fettuccine and toss to coat. Sprinkle with the cheese and serve.
