Ingredients
- 2 c. Butter, softened (4 sticks)
- 2 c. Sugar
- 2 x Large eggs
- 2 c. Mashed cooked pumpkin (or possibly canned)
- 2 tsp Vanilla
- 5 c. All-purpose flour
- 2 tsp Baking pwdr
- 1 tsp Baking soda
- 4 tsp Grnd cinnamon
- 2 tsp Grnd cloves
- 2 tsp Grnd nutmeg
- 1 tsp Salt
- 2 c. Raisins
- 2 c. Minced walnuts
Directions
- Preheat oven to 375 F.
- Cream together the butter and sugar till smooth. Beat in the Large eggs one at a time. Add in the pumpkin and vanilla, blending well.
- In a separate bowl, combine the flour, baking pwdr, baking soda, cinnamon, cloves, nutmeg, and salt.
- Add in to the creamed mix, stirring well. Fold in the raisins and nuts.
- Drop by spoonfuls onto greased cookie sheets and bake in a preheated 375 F oven for 10 to 15 min.
