Directions

  1. Make your favourite stew and ensure meat and vegetables are cooked before adding the dumplings. Also ensure that there is enough liquid or gravy in the pot as you cannot adjust this during the dumplings cooking time.
  2. METHOD
  3. Sift dry ingredients into bowl.
  4. Work butter into flour until mixture resembles breadcrumbs.
  5. Add milk gradually and mix until you have a soft, firm dough. (Not wet and sticky - if you've been a bit too generous with the milk, roll dough lightly in a bit of flour)
  6. Divide dough into 4 or 5 equal balls.
  7. Place on top of stew, cover pot with a lid and reduce heat to simmer.
  8. DO NOT BE TEMPTED TO LIFT THE LID DURING COOKING TIME!!
  9. You will be rewarded with beautiful light dumplings.
  10. Bon appetite!
  11. VARIATIONS - choose one of the following and add before liquid.
  12. 2 teaspoons dry mustard
  13. fresh parsley, finely chopped
  14. Mixed herbs of choice
  15. grated cheese

These look great, Les. My mom used to love to make dumplings, and in 25 years of cooking myself I have never made them. Not even once. That said, I'm going to give these a try so at least my kids will have tasted dumplings. And if they love them...maybe I'll add them to my routine. Thanks for sharing!
