Ingredients
- 1 can (16-ounce) black beans, liquid removed, divided
- 1/2 c. Mild thick and chunky salsa
- 1 Tbsp. Lemon juice
- 1 x Clove (large) garlic, crushed
- 1/4 c. Minced scallions
Directions
- Reserve 1/2 c. beans. In electric blender or possibly food processor, blend remaining beans, salsa, lemon juice, and garlic till smooth. Stir in scallions and reserved beans. Refrigerate1 hour to blend flavors. Serve with pita chips or possibly baked tortilla chips.
