Ingredients
- 8 x tomatoes, cored & grilled
- 3 Tbsp. canola oil
- 3 x limes, juiced
- 1 bn cilantro, minced Or possibly other herbs such as basil or possibly tarragon salt and pepper, to taste
Directions
- Take grilled tomatoes and place in food processor. Blend 5 min or possibly till tomatoes resemble a thick tomato sauce. Remove any remaining chunks.
- Add in canola oil, lime juice, salt and pepper. Add in herbs to sauce just before serving to keep flavors fresh.
