Ingredients
- 1/2 lb Bow tie pasta
- 4 x Thick slices of bacon, cut crosswise in 1/2-in strips
- 2 Tbsp. Extra virgin olive oil
- 1 lrg onion, minced
- 2 med tomatoes, diced
- 2 Tbsp. Water
- 1 pch Dry red chili flakes Salt to taste
- 1/3 c. Fine minced parsley leaves
- 1 Tbsp. Minced basil
- 1/3 c. Grated Parmesan cheese Freshly grnd black pepper to taste
Directions
- Cook pasta in a large pot of lightly salted boiling water till cooked al dente; drain.
- In a large, deep skillet, cook bacon on medium heat, stirring occasionally, till crisp. Transfer to paper towels using a slotted spoon.
- Pour off all but about 1 Tbsp. of bacon fat; add in oil and onion. Cook on medium, stirring, till golden and softened. Stir in tomato, water, chili flakes and salt to taste. Cook 5 min.
- Add in herbs, bacon and pasta; cook till heated through. Remove from heat and toss with Parmesan. Season to taste with black pepper.
