  • 4 leg quarters
  • 1 can chunk pineapple
  • 4 med. size potatoes
  • 1 can cooked carrets
  • 1 large sweat onion
  • 1 scotch bonnet
  • 1 12oz. can of mountain dew
  • salt and pepper
  • 1 clove garlic
  • 2 sprigs thyme

Directions

  1. in a large 13x9 bakeing dish
  2. combine chicken peaces-1 can of mountain dew-cubed potatoes
  3. cubed onion-garlic-chopped scotch bonnet(use rubber gloves)
  4. put in the can of cooked carrets (dont worry they wont turn into mush)salt and pepper to taste
  5. place pineapples and thyme on top(all the flavor will run down on to the ckicken and potatoes)
  6. fill all most to top with water,cover with alum. foil
  7. cook at 325 for 3 to 4 hrs. are until chicken bones pull out freely
  8. enjoy
