Ingredients
- 1 Tbsp. finely-minced fresh rosemary
- 1/4 c. balsamic vinegar
- 1/4 c. extra virgin olive oil
- 1 Tbsp. Dijon mustard Freshly-cracked black pepper to taste
- 1 x English cucumber with peel washed
Directions
- For the Dressing: Add in rosemary, vinegar, and extra virgin olive oil to a small saucepan. Heat for approximately 5 min over very low heat to blend and intensify flavors. Remove from heat. Wisk in the Dijon mustard.
- Slice the cucumber into very thin slices. Place into a decorative bowl. Pour dressing over cucumber slices. Toss. Chill till ready to serve. (Regular cucumbers also work well in this recipe.)
