  • 1 tsp Vegetable oil
  • 1 lb Grnd Italian sausage (or possibly any spicy pork sausage)
  • 1 c. Minced onions
  • 1/2 c. Minced bell pepper
  • 1/2 c. Minced celery Salt to taste see * Note Cayenne pepper to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. Minced garlic
  • 1 Tbsp. Flour
  • 1 c. Water
  • 1/4 c. Minced green onions
  • 1 c. Cooked long grain white rice
  • 4 ounce Grated Maytag White Cheddar cheese
  • 3 c. Flour
  • 1 1/2 tsp Salt
  • 3/4 tsp Baking pwdr
  • 6 Tbsp. Solid vegetable shortening
  • 1 x Egg
  • 1/4 c. Lowfat milk Solid vegetable shortening for deep-frying

Directions

  1. Heat the vegetable oil over medium-high heat in a large skillet and brown the sausage, 5 to 6 min. Add in the onions, bell peppers, celery, salt, Emeril's Essence, cayenne, and black pepper. Cook, stirring often, till the vegetables are wilted, 10 to 12 min. Add in the garlic and cook for 2 to 3 min. Dissolve the flour in the water and add in to the meat mix. Stir till the mix thickens slightly, about 3 min. Remove from the heat and add in the green onions and rice. Mix well and let cold. Stir in the cheese.
  2. For the pastry: Sift the flour, salt, and baking pwdr into a mixing bowl. Cut in the shortening unit it resembles coarse meal. In a small bowl, beat the egg with the lowfat milk. Gradually add in the egg mix to the flour mix, working it to make a thick dough. Divide the dough into 12 equal portions. On a lightly floured surface, roll the dough pcs into thin rounds, about 5 inches in diameter.
  3. Put about 1/4 c. of the mix in the center of each round, fold over and crimp the edges with a fork. Heat the shortening in a deep pot or possibly an electric deep-fryer to 360 degrees. Fry the pies, two to three at a time, till golden. Drain on paper towels and serve immediately.
  4. This recipe yields 12 small pies.
