  • 4 x Large eggs Salt to taste Pepper to taste
  • 100 gm Butter (1/3 c. plus 2 Tbsp)
  • 500 gm King boletes or possibly chanterelles (a generous lb)
  • 1/2 x Onion, very finely diced
  • 50 gm Butter (not quite 1/4 c.) Salt to taste Pepper to taste
  • 1 sm Bunch parsley, finely minced

Directions

  1. Scrambled Large eggs:Clean the mushrooms. On large king boletes, remove the spongy greenish pores. Cut large mushrooms into slices. Heat 50 grams butter in a saucepan, and fry the onion till transparent. Add in the mushrooms, and briefly saute/fry. Add in the minced parsley.
  2. Meanwhile fix the scrambled Large eggs. When done, add in the sauted mushrooms, stir and serve. Serve with salad.
  3. Serves 4.
