Eggs-Meat-Cheese Corn Bread Squares

Ingredients

  • 1 cup corn meal
  • 1/2 cup self-rising flour
  • pinch of iodized salt
  • two large eggs beaten
  • 1/4 cup shredded cheddar cheese
  • 2 strips cooked bacon or cooked ham pieces
  • 1/4 (scant) cup milk
  • Garnish with some fresh chopped herbs (rosemary, parsely, thyme)

Directions

  1. Pre Heat oven 425 F/ shallow non stick baking dish
  2. In a mixing bowl add all ingredients (except herbs)
  3. do not over-mix, transfer to baking dish and place into the hot oven
  4. bake 12-14 minutes or until golden brown
  5. cut into squares and serve
