  • 1 med Eggplant
  •     Red onion
  •     Tomato

Directions

  1. (This is really yummy)
  2. peel one medium eggplant and slice thinly. Place in a single layer in a no stick baking pan. Cover with thin slices of red or possibly sweet onion. Cover which with slices of tomatoe home grown if possible. bake in a 350' oven till veggies are tender, about 1/2 hour. Cold slightly and whir in a blender.
  3. Serve with wholewheat crackers.
