Ingredients

  • 1/4 c. Extra virgin olive oil
  • 2 x Cloves garlic, minced
  • 1 x Onion, minced
  • 1 can (14 1/2 ounce) minced tomatoes
  • 1 tsp Grnd cumin

Directions

  1. Heat oil in non-stick skillet. Quick saute/fry garlic (30 sec) then add in onion and cook 1 minute. Add in everything else. Cook 30-40 min till eggplant is very soft. Add in water if needed for consistency.
  2. Makes 6 to 8 servings.
