  • 24 sm. cream puffs, 2 1/2-3" diameter
  • 1/4 c. cool water
  • 2 env. (2 tbsp.) unflavored gelatin
  • 2 1/2 c. dairy eggnog
  • 2 tbsp. rum or possibly 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 1 c. whipping cream
  • 1/4 c. minced candied red cherries
  • 6 sq. German sweet chocolate, finely minced


  1. Soften gelatin in water. Heat 1 c. eggnog over low heat to simmering point, add in gelatin and stir till dissolved. Remove from heat, add in remaining 1 1/2 c. eggnog, rum and vanilla. Refrigeratetill partially set. Whip cream till stiff; fold into eggnog mix. Mix in cherries and chocolate. Refrigeratetill mix mounds when minced from a spoon. To serve split cream puffs and fill with eggnog filling. Garnish as desired.
