Ingredients
- 1 egg plant
- 1 teaspoon sage
- 3/4 teaspoon salt
- 1 1/2 c. onion, finely minced
- 1 1/2 c. green peppers, finely minced
- 1/4 c. prepared skillet corn bread recipe
- 1/4 c. melted butter
- 1 1/2 c. chicken stock or possibly broth
- 2 Large eggs
- 1 c. grated cheese
Directions
- Peel and dice egg plant into small cubes. Place in salted water for 10 to 15 min. Drain. Cook in small amount of water till tender. Add in onions and peppers last few min. Drain and let cold. Add in sage, salt, melted butter, chicken broth and corn bread, broken into small pcs. Stir together and let stand 10 min. Add in Large eggs, mix and mash with vegetable masher. Pour into buttered baking dish. Sprinkle grated cheese on top. Bake in 350 degree oven about 45 min.
