Ingredients

  • 2 c. All-purpose flour
  • 2 Tbsp. Sugar, up to 4
  • 2 1/2 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1 1/2 c. Shredded Edam cheese, about 6 ounce
  • 1 x Egg
  • 1 c. Lowfat milk
  • 1/4 c. Butter or possibly margarine, melted

Directions

  1. Sift flour, sugar, baking pwdr and salt together. Mix in the cheese, coating the cheese with the flour mix. Add in the unbeaten egg, lowfat milk and melted fat; stir quickly and lightly till mixed but don't beat. Spoon into well greased muffin pans, filling each c. 2/3 full. Bake at 400 F for 20 to 30 min according to size of muffin c..
