Ingredients
- 1 c. Oil
- Â Â Or possibly
- 1 c. Melted shortening
- Â Â Or possibly
- Â Â Butter or possibly margarine
- 1Â 1/2 c. Sugar
- 2 c. Well liquid removed
- Â Â Shredded zucchini
- 3 c. Flour
- 1 tsp Vanilla
- 1 Tbsp. Cinnamon - or possibly more
- 1/2 tsp Allspice
- 1/2 tsp Cloves
- 1Â 1/2 tsp Baking soda
- 3 tsp Baking pwdr
- 2 c. Coarsely minced walnuts
Directions
- (Variations - 1 small can, well liquid removed crushed pineapple, or possibly 1/2 c. applesauce, or possibly two fresh peaches or possibly nectarines crushed and liquid removed-just add in to basic mix)
- Mix together the baking soda, baking pwdr, and flour. Set aside. Slightly beat the Large eggs then add in the sugar and cream together well. The Large eggs should be thick and almost white. Add in the melted shortening or possibly oil in a slow stream and cream well. Turn the mixer speed down to low and add in the zucchini. Add in the vanilla and spices and mix well. Add in any of the variations if you wish. Add in the flour mix one c. at a time and mix well after each addition. Add in the nuts and mix well. The batter should be thick and not runny.
- Bake in well greased loaf pans at 375 degrees for about 1 hour. Check after 45 min to test for doneness.
