Easy slow cooker jambalaya Recipe

Ingredients

  • 1 1/2 pounds boneless skinless chicken (either thighs or breasts)
  • 1 pound smoked sausage, sliced
  • 1 sweet onion, chopped
  • 1 green pepper, chopped
  • 3-4 stalks celery, chopped
  • 1 28-ounce can diced tomatoes, undrained
  • 4 cloves garlic, minced
  • 1 tablespoon Creole seasoning (I use Tony Chachere's)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups chicken stock
  • 1 pound shrimp, peeled, deveined and cut into bite-sized pieces
  • 1 3/4 cups rice
