Ingredients

  • 2 c. sugar
  • 3 T butter
  • 1 c. evaporated lowfat milk
  • 1/4 c. finely minced salted peanuts
  • 1 c. mini marshmallows
  • 1 (12 ounce) jar chunk peanut butter
  • 1 teaspoon vanilla

Directions

  1. In heavy 2 qt saucepan put together sugar, butter, and lowfat milk. Bring to a rolling boil over medium heat, stirring constantly, for 5 min. Remove from heat. Add in marshmallows, peanut butter and vanilla. Stir vigorously till melted and blended.Put into pan. Sprinkle peanuts over top and press into fudge (gently). Make in squares; cut when cold. Makes 2 lb.
