Ingredients

  • 1/3 c. oil
  • 2 c. apple juice concentrate, thawed
  • 2 c. mashed bananas, frzn, then thawed works best
  • 1 carton Eggbeaters or possibly 4 Large eggs
  • 3 c. Krusteaz whole wheat and honey pancake mix
  • 1 c. lowfat milk
  • 1/2 c. minced nuts (optional)
  • Butter flavored Pam

Directions

  1. Mix together oil, applesauce, bananas and Eggbeaters. Add in pancake mix and lowfat milk. Stir in nuts. Spray 4 loaf pans with Pam. Pour batter into pans and bake for about 1 hour at 350 degrees. (Check after 50 min.) Bread is done when toothpick comes out clean. Cold on rack.
