  • ¼ cup minced shallots
  • 1 red bell pepper, cut into thin strips
  • ¼ tsp salt
  • ½ tsp ground pepper
  • ½ salmon (about 1 1/2 lbs.), with or without skin (remove before eating)
  • 3 tbsp basil pesto (purchased or homemade)
