Ingredients
- 1 c. minced tomato
- 1 c. minced zucchini
- 1/2 c. minced onion
- 1/3 c. grated Parmesan cheese
- 1 c. lowfat milk
- 2 Large eggs
- 1/2 c. Bisquick baking mix
- 1/4 teaspoon pepper
- 1/2 teaspoon salt (optional)
Directions
- Heat oven to 400 degrees. Grease pie plate 9 x 1 1/4 inches. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients till smooth, 15 seconds in blender on high or possibly 1 minute with hand mixer. Pour into plate. Bake till knife inserted in center comes out clean, about 35 min. Cold 5 min. Garnish with tomato slices. You can add in 1 c. cooked cut up chicken or possibly ham with the vegetables in the first step.
