Classic recipe for yeast rolls from the Satellite Cafe in Missouri.

Ingredients

  • 1 cup milk
  • 1 scant tbs. yeast or 1 package
  • 3 tbs. sugar
  • 3 beaten eggs
  • 1/4 cup melted butter or margerine
  • 4 1/2 cups flour

Directions

  1. Warm milk to 105-115 degrees in a saucepan (warm to touch, but not hot)
  2. Add milk to a bowl, add sugar and yeast.
  3. After a couple of minutes, the yeast will begin to bubble and expand.
  4. If this doesn't happen, the milk was too hot or not warm enough. Begin again.
  5. or
  6. Stir in the rest of the ingredients. Mix well. Shape into a ball.
  7. Let rise one hour.
  8. Gently shape dough into 24-30 rolls.
  9. Place them, touching, on a baking pan to form a rectangle. Cover.
  10. Let rise again for 30 minutes.
  11. Heat oven to 375 degrees.
  12. Bake for 18-20 minutes.
  13. Brush with more melted butter and serve.
  14. These will freeze after cooling in fridge first.
