Easy Chicken With Wine Recipe

  • 1 loaf Italian bread
  • 1 pound boneless skinless chicken breast, cut into pcs
  • 8 ounce Mozzarella cheese, sliced or possibly shredded
  • 1 can of mushrooms or possibly fresh
  • 1 lg. onion, sliced and cut in half
  • 2 T butter
  • 1/2 c. white wine (any wine can be used in place of white)
  • Salt, pepper to taste

Directions

  1. Slice Italian bread about 1 inch thick, cover with Mozzarella cheese. Place on a cookie sheet. In a large frying pan, saute onion and mushrooms till tender. Place chicken in a 9 x 13 baking dish, pour on wine, onions and mushrooms, salt and pepper to taste. Bake at 350 degrees covered with foil about 20 min or possibly till chicken is done. Remove foil from chicken for last five min. Put cookie sheet with bread in oven till cheese melts. Serve chicken, onion, mushrooms over bread. I pick it up and eat like pizza. Delicious! Easy!Can be prepared, covered in advance. Preparation time 15 to 20 min, cooking time, 20 min. I serve it with a salad and baked potato and of course, a glass of wine.
