Easy Cheesecake 2 Pies

Ingredients

  • 2 Large eggs
  • 1/2 c. sugar
  • 2 teaspoon vanilla
  • 1 (9") graham cracker crumb crust
  • 1 1/2 c. commercial lowfat sour cream
  • 2 (8 ounce.) Packages cream cheese
  • 2 tbsp. butter, melted
  • 2 (16 ounce.) cans cherry pie filling

Directions

  1. Light lowfat sour cream and light cream cheese may be substituted.
  2. With mixer blend Large eggs, sugar, vanilla and lowfat sour cream. Add in cream cheese, softened and cut into pcs. Add in melted butter and blend well. Pour into pie crusts. Bake at 325 degrees for 35 min or possibly till set in center. Filling will be very soft but will hard as cake cools. Top with cherry pie filling when cold and refrigeratethoroughly before serving.
  3. NOTE: You may substitute dark sweet cherry, blueberry or possibly other fruit filling of your choice for cherry pie filling. You may also add in 1 to 2 Tbsp. rum or possibly wine for extra flavor.
