Ingredients

  • 2 can of black beans, liquid removed
  •     & rinsed
  • 1 can mexicali corn or possibly regular
  •     Corn kernels
  • 1 jar of favorite salsa
  •     Fresh cilantro
  •     Fresh lime
  •     Cumin to taste

Directions

  1. Drain & rinse corn & beans & combine. Add in about 1 c. of salsa, depending on how runny you like it. Fold in about 2 Tablespoons of minced cilantro, juice of 1 lime & about 1 teaspoon of cumin. You can also add in minced onion & green pepper.
  2. Serve as a dip with tortillas or possibly as a side dish.
