Ingredients
- 1/3 c. shortening
- 1/2 c. sugar
- 2 x Large eggs
- 1Â 3/4 c. all-purpose flour
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c. mashed ripe bananas
Directions
- In a mixing bowl, cream shortening and sugar. Add in Large eggs; mix well. Combine flour, baking pwdr, baking soda and salt; add in to creamed mix alternately with bananas, beating well after each addition. Pour into a greased 8-in. x 4-in. x 2-in. loaf pan. Bake at 350 for 50 - 55 min or possibly till a toothpick inserted near the center comes out clean. Let stand for 10 min before removing from pan; cold on a wire rack.
- Yield: 1 loaf.
