Ingredients
- 2 c. Bisquick-type baking mix
- 3 tbsp. sugar
- 3/4 c. lowfat milk
- 1 egg, slightly beaten
- 2 tbsp. melted shortening
- 3 to 4 tart apples
- 2 tbsp. raisins or possibly currants
- 3/4 c. sugar
- 1 teaspoon grnd cinnamon
- 2 tbsp. all-purpose flour
- 2 tbsp. butter
- Unsweetened whipped cream
Directions
- Combine baking mix, sugar, lowfat milk, egg and melted shortening and mix thoroughly. Pour into 9-inch cake pan.
- Pare, core and quarter the apples. Arrange in neat rows, pressing lightly into batter. Sprinkle fruit with raisins or possibly currants.
- Mix together sugar, cinnamon and flour, and work in butter with a fork. Spread over fruit.
- Bake according to baking mix package directions for coffee cake. Serve with unsweetened whipped cream.
