Ingredients
- 1 - box Duncan Hines Lemon Supreme cake mix
- 4 - eggs
- 1/4 - cup canola oil
- 1 - cup milk
- 24 - Easter cupcake liners
- 2 - cups sweetened coconut flakes
- Pudding Butter Cream Frosting:
- 1/2 - cup unsalted butter, room temperature
- 1/2 - cup shortening, softened coconut oil or use all butter
- 1 - (3.56 oz) box Lemon or Vanilla instant pudding mix (4 serving size)
- 1/2 - cup cold milk + extra for thinning
- 1 - cup powdered sugar
- 1/2 - teaspoon clear vanilla extract (omit if using lemon pudding)
- Candy Decorations:
- green icing paste or green food coloring
- sour punch straws
- Lindt small chocolate rabbits
- blue or yellow Easter Peep bunnies
- Starburst jelly beans or similar
- robin eggs, Hershey's chocolate eggs, or m&m's

%20and%20any%20other%20fun%20items%20I%20can%20get%20my%20hands%20on.%20The%20Easter%20department%20at%20Walmart%20usually%20has%20a%20great%20selection%20to%20choose%20from%20at%20great%20prices.%3C/p%3E%3Cp%3EOne%20thing%20I%20always%20do%20for%20any%20holiday%20is%20bake%20some%20type%20of%20special%20treat%20to%20celebrate%20(a%20cake,%20cookies,%20or%20special%20holiday%20bread).%20A%20week%20or%20so%20back%20my%20kids%20and%20I%20made%20these%20cute%20Lemon%20Coconut%20Easter%20Basket%20Cupcakes%20that%20turned%20out%20so%20adorable%20and%20they%20were%20a%20huge%20hit.%3C/p%3E%3Cp%3EI%20used%20a%20Lemon%20Supreme%20Cake%20mix%20for%20the%20cupcakes%20and%20Vanilla%20Pudding%20Butter%20Cream%20for%20the%20frosting.%20If%20you're%20a%20lemon%20lover%20you%20can%20use%20a%20Lemon%20pudding%20mix%20instead%20of%20vanilla.%20I%20know%20some%20folks%20frown%20on%20using%20cake%20mixes,%20but%20I%20love%20them.%20They%20come%20in%20all%20sorts%20of%20flavors%20and%20are%20perfect%20for%20so%20many%20recipes.%3C/p%3E%3Cp%3EAlso%20with%20a%20few%20simple%20changes%20ingredient%20wise%20you%20can%20make%20a%20boxed%20cake%20mix%20taste%20just%20like%20a%20bakery%20cake.%20I%20usually%20add%20a%20extra%20egg%20than%20what%20is%20called%20for%20on%20the%20box%20and%20use%20milk%20in%20place%20of%20water.%20You%20can%20also%20substitute%20melted%20butter%20in%20place%20of%20oil,%20butI%20used%20canola%20oil%20%20in%20this%20recipe.%3C/p%3E%3Cp%3EThe%20frosting%20is%20a%20new%20recipe%20I%20came%20across%20on%20Pinterest%20and%20I%20love%20it!%20It's%20made%20from%20a%20dry%20pudding%20mix%20and%20isn't%20sweet%20at%20all.%20It's%20light,%20fluffy%20and%20holds%20it's%20shape%20when%20decorating.%20With%20all%20the%20pudding%20flavors%20out%20there%20I%20can%20think%20of%20so%20many%20flavor%20combinations.%20%20I%20used%20a%20vanilla%20pudding%20mix,%20but%20I%20think%20lemon%20would%20pair%20perfectly%20with%20these%20cupcakes.%3C/p%3E%3Cp%3EAll%20of%20the%20ingredients%20pictured%20above%20were%20purchased%20at%20my%20local%20Walmart.%20Start%20by%20baking%20the%20cupcakes%20according%20to%20the%20package%20directions.%20Add%20one%20extra%20egg%20and%20substitute%20milk%20in%20place%20of%20water%20and%20add%20the%20oil.%20Let%20the%20cupcakes%20cool%20completely%20on%20a%20baking%20rack.%3C/p%3E%3Cp%3EChoose%20some%20fun%20items%20to%20fill%20the%20Easter%20Basket%20Cupcakes.%20I%20picked%20out%20some%20small%20Lindt%20chocolate%20rabbits,%20yellow%20Easter%20peep%20bunnies,%20Starburst%20jelly%20beans%20and%20Hershey's%20chocolate%20eggs.%20The%20Hershey's%20eggs%20were%20a%20bit%20large,%20so%20i%20think%20the%20small%20robin%20eggs%20might%20be%20a%20better%20option.%3C/p%3E%3Cp%3ERemove%20all%20the%20candies%20from%20their%20packaging%20and%20tint%20the%20coconut%20green%20(to%20resemble%20Easter%20grass).%20To%20color%20the%20coconut%20just%20combine%20a%20few%20drops%20of%20green%20food%20coloring%20or%20icing%20paste%20with%201%20teaspoon%20water;%20add%20a%20couple%20drops%20to%202%20cups%20coconut%20and%20stir%20until%20evenly%20tinted%20(I%20added%20the%20coconut%20to%20a%20zip%20lock%20bag%20and%20shook%20it%20to%20combine).%20Now%20your%20ready%20to%20decorate%20the%20cupcakes.%3C/p%3E%3Cp%3EStart%20by%20filling%20a%20pastry%20bag%20with%20frosting%20and%20pipe%20on%20each%20cupcake%20(I%20used%20the%20star%20tip).%20Next%20sprinkle%20on%20the%20colored%20coconut%20to%20resemble%20Easter%20grass.%3C/p%3E%3Cp%3EAdd%20one%20sour%20punch%20straw%20into%20each%20side%20of%20the%20cupcake%20to%20make%20the%20handle%20for%20the%20Easter%20baskets%20(I%20found%20the%20sour%20punch%20straws%20in%20the%20checkout%20isles).%20Place%20a%20chocolate%20bunny%20or%20Easter%20peep%20in%20the%20center%20of%20each%20cupcake%20(pushing%20down%20into%20the%20cupcake).%20Decorate%20with%20desired%20candies%20and%20refrigerate%20the%20cupcakes%20before%20serving.%3C/p%3E%3Cp%3EEaster%20Basket%20Cupcakes%20%7BLemon%20Coconut%7D%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degree.%20Line%2024%20muffin%20cups%20with%20paper%20cupcake%20liners.%20In%20a%20large%20bowl,%20prepare%20cake%20mix%20as%20directed%20on%20box%20(adding%20the%20eggs,%20oil%20and%20water).%3C/p%3E%3Cp%3EFill%20prepared%20cups%20three-fourths%20full%20of%20batter.%20Bake%2020-25%20minutes%20or%20until%20a%20toothpick%20inserted%20comes%20out%20clean.%20Cool%20in%20pans%2010%20minutes%20before%20removing%20to%20a%20cooling%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20mix%20the%20pudding%20mix%20with%201/2%20cup%20milk.%20Set%20aside%20in%20the%20refrigerator%20or%20freezer%20until%20thick%20(about%203%20minutes).%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20mix%20the%20butter%20and%20shortening%20together%20until%20creamy.%20Add%20the%20thickened%20pudding%20and%20mix%20to%20combine.%20Add%20the%20powdered%20sugar%20and%20blend%20again.%20Add%20additional%20milk%201%20tablespoon%20as%20a%20time%20until%20the%20desired%20consistency%20is
