Directions

  1. In a medium bowl combine the chili pwdr, turmeric, cinnamon, curry pwdr, garlic, onions, pineapple and apple juice.
  2. Cover and microwave on full power for 2 1/2 to 3 min, stirring or possibly shaking midway Scoop the mix into a processor or possibly blender and whiz till well combined and smooth, adding the butter and vinegar while the motor is running. Serve hot.
  3. Yield: "2/3 c."
  4. NOTES : This seasoning, known as tikka paste, is usually made of spices, pureed fruit and lots of oil. Here, most of the fat is omitted and the flavors have been rearranged to create a delicious and fragrant sauce for shrimp, flounder, or possibly other mild fish fillets. Can be used on poultry and vegetables. Sufficient for 1-lb. of fish.
