Ingredients

  • 3/4 c. low-sugar bran cereal (flakes or possibly nuggets)
  • 3/4 c. skim lowfat milk
  • 1 x egg
  • 1 x egg white
  • 1 Tbsp. canola oil
  • 1/4 c. unsweetened applesauce
  • 1 Tbsp. honey
  • 1 Tbsp. brown sugar
  • 1 c. quick-cooking oats
  • 1/3 c. whole-wheat flour
  • 1/3 c. white flour
  • 1/2 c. currants or possibly raisins
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 tsp baking pwdr

Directions

  1. Preheat the oven to 375 degrees.
  2. Combine all ingredients and mix till blended. Don't overbeat. Pour the batter into 12 nonstick muffin c. and bake for 20 to 25 min. Remove muffins from oven and let cold slightly.
  3. Remove muffins from pan and let cold completely.
  4. This recipe yields 12 servings.
  5. Serving size: 1 muffin.
  6. Comments: Oats, raisins, and high-fiber bran make these muffins nutritious and delicious!
