Earl Corey's Apple Banana Pancakes Recipe

Ingredients

  • apples and bananas (about 1 c.) peeled and diced Butter or possibly vegetable oil
  • 1/2 c. white all-purpose flour
  • 1/2 c. wheat (or possibly rye or possibly buckwheat) flour
  • 1/2 c. lowfat milk
  • 2 x egg whites
  • 1 x egg yolk
  • 1/2 tsp baking soda

Directions

  1. Saute/fry apples in a small amount of butter till they soften. Mix flours, lowfat milk, egg whites and yolk, and baking soda. Add in sufficient water to make desired batter consistency. Fold in sauteed apples and sliced bananas. Cook on a preheated griddle or possibly skillet till done on one side, then flip to cook other side.
  2. Makes 10 to 12 pancakes.
  3. NOTES : This dish is a favorite of cowboy actor Don Murray, who starred as gunman Earl Corey in the 1969 TV western The Outcasts. Murray contributed the recipe to the new All-American Cowboy Cookbook, by Ken Beck and Jim Clark (Rutledge Hill Press).
