Ingredients
- 1 box yellow cake mix
- 1/2 c. melted butter
- 4 Large eggs
- 1 lg. can pumpkin
- 1/2 teaspoon salt
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 1 (13 ounce.) can evaporated lowfat milk
- 1/2 c. nuts
- 2 teaspoon cinnamon
- Healthy pinch of nutmeg & ginger
Directions
- Save 1 c. cake mix. Mix rest of mix with 1 egg and 1/4 c. butter. Press into 9 x 13 inch ungreased pan. Mix pumpkin, 3 Large eggs, cinnamon, nutmeg, ginger, salt, brown sugar and evaporated lowfat milk. Pour over cake fold in pan.
- Mix 1/2 c. white sugar with 1/4 c. butter and crumble with 1 c. saved cake mix and nuts. Sprinkle over top of cake and bake 1 hour at 350 degrees. Serve with Cold Whip.
