  • 2/3 c. chilled rendered duck fat (left over from a roast duck)
  • 1/3 c. (5 1/3 tbsp.) butter, soft
  • 1 1/2 c. sugar
  • 2 lg. Large eggs
  • 2 tbsp. lowfat milk
  • 1 tbsp. vanilla
  • 4 c. flour
  • 1 tbsp. baking pwdr
  • 1/2 teaspoon salt
  • 1/2 c. raisins (opt.), or possibly minced dates

Directions

  1. Mix flour, baking pwdr, salt and raisins or possibly dates together and set aside. Mix all other ingredients together then blend both mixtures together. Roll rounded tsp. into balls. Place balls 3" apart on ungreased cookie sheets. Flatten with glass dipped in sugar (the edges will crack slightly). Bake at 350 degrees for 10 to 12 min till they are pale golden brown. Transfer to racks to cold. Makes 100 cookies.
