- Five years ago: Best Ever Cream Cheese Pound Cake with Easy Caramel Frosting and Spiced Apples
- 1/2 cup (1 stick) butter
- 6 tablespoons water
- 1 1/8 cups cake flour
- 3/4 cup plus 2 tablespoons white sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1 egg, lightly beaten
- 1/4 cup sour cream
- 1 cup pumpkin puree
- 1/4 cup molasses
- 3 tablespoons rum
- Cinnamon Maple Icing Ingredients:
- 1/2 cup milk
- 2 1/2 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 cup plus 2 tablespoons granulated sugar (not powdered sugar)
- 1 tablespoons maple syrup
- 1/2 cup (1 stick) butter, at room temperature

,%20great%20food,%20and%20lots%20of%20things%20to%20do.%20Topping%20my%20list%20are%20San%20Diego,%20San%20Francisco%20(in%20its%20cheaper%20days,%20please),%20and%20Florence!%20Wouldn%E2%80%99t%20it%20be%20nuts%20to%20live%20in%20Florence?%3C/p%3E%3Cp%3EOne%20thing%20that%20baffles%20us%20during%20these%20discussions%20is%20how%20people%20live%20where%20it%E2%80%99s%20cold.%20A%20huge%20chunk%20of%20our%20nation%E2%80%99s%20population%20lives%20where%20it%E2%80%99s%20cold%20for,%20like,%20half%20the%20year!%20Where%20they%20have%20to%20dig%20their%20cars%20out%20of%20snow%20to%20go%20to%20work%20starting%20in%20October!%20Where%20things%20like%20ice%20fishing%20and%20snowshoeing%20exist!%20You%20might%20be%20sitting%20somewhere%20right%20now%20where%20it%E2%80%99s%20already%20started%20snowing.%20I%20need%20to%20understand.%3C/p%3E%3Cp%3EHere%20in%20the%20piedmont%20region%20of%20North%20Carolina,%20there%20are%20four%20distinct%20seasons%20and%20the%20winter%20is%20tolerable.%20Temperatures%20can%20get%20down%20to%20the%20teens,%20but%20usually%20hover%20in%20the%2030s%20for%20the%20three%20most%20intense%20winter%20months%20(December,%20January,%20and%20February).%20While%20it%20snows%20a%20few%20times%20each%20year,%20it%E2%80%99s%20never%20too%20much%20at%20once%20(we%20do%20get%20to%20enjoy%20a%20few%20school/work%20closings!)%3C/p%3E%3Cp%3EEven%20here,%20though,%20I%20have%20trouble%20in%20the%20winter.%20I%20vividly%20remember%20sitting%20in%20an%20early%20morning%20class%20in%20high%20school%20thinking%20that%20I%20might%20literally%20die%20of%20hypothermia.%20Every%20year%20around%20February%20I%20feel%20oppressed%20by%20the%20seemingly%20never-ending,%20overcast%20winter.%20If%20that%E2%80%99s%20how%20I%20feel%20here,%20how%20do%20any%20of%20you%20live%20in%20the%20north?%20New%20England?%20Canada?%20Scandinavia?%3C/p%3E%3Cp%3EI%E2%80%99m%20so%20interested%20in%20what%20you%20all%20have%20to%20say%20about%20the%20weather%20where%20you%20live.%20Do%20you%20love%20it?%20Hate%20it?%20Disregard%20it%20completely?%20Does%20it%20affect%20your%20mood?%20How%20have%20you%20learned%20to%20cope?%3C/p%3E%3Cp%3EWe%20chatted%20about%20the%20cold%20over%20on%20Facebook.%20And%20then%20discovered,%20really,%20it%E2%80%99s%20no%20picnic%20for%20folks%20living%20in%20oppressively%20hot%20places,%20either.%20Well,%20except%20for%20that%20one%20Australian%20who%20posted%20the%20beach%20photo.%3C/p%3E%3Cp%3ELet%E2%80%99s%20all%20make%20drunken%20pumpkin%20cakes%20and%20move%20to%20Australia.%20Deal?%3C/p%3E%3Cp%3EOne%20year%20ago:%20Quick%20and%20Easy%20Sour%20Cream%20Apple%20Kuchen%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Brown%20Butter%20Pumpkin%20Cake%20Cheesecake%20with%20Salted%20Caramel%3C/p%3E%3Cp%3EThree%20years%20ago:%20Easy%20Sopapilla%20Pumpkin%20Cheesecake%20Bars%3C/p%3E%3Cp%3EFour%20years%20ago:%20Blueberry%20Stuffed%20French%20Toast%20Bowls%3C/p%3E%3Cp%3EFive%20years%20ago:%20Best%20Ever%20Cream%20Cheese%20Pound%20Cake%20with%20Easy%20Caramel%20Frosting%20and%20Spiced%20Apples%3C/p%3E%3Cp%3EDrunken%20Pumpkin%20Gingerbread%20Snack%20Cake%3C/p%3E%3Cp%3ERecipe%20by:%20Willow%20Bird%20Baking%3C/p%3E%3Cp%3EYield:%209-12%20servings%3C/p%3E%3Cp%3EThis%20cake%20whips%20up%20quickly,%20but%20then%20sits%20overnight%20to%20let%20the%20flavors%20meld.%20It%E2%80%99s%20a%20great%20holiday%20or%20company%20cake%20%E2%80%94%20or%20a%20great%20Monday%20cake,%20let%E2%80%99s%20be%20real.%20If%20you%E2%80%99re%20not%20a%20huge%20fan%20of%20rum,%20feel%20free%20to%20substitute%20bourbon%20or%20whatever%20you%20enjoy%20%E2%80%94%20or%20leave%20out%20the%20alcohol%20altogether.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E*To%20toast%20pecans,%20bake%20at%20350%20degrees%20F%20for%205-7%20minutes,%20tossing%20regularly,%20until%20fragrant.%20Allow%20to%20cool%20completely.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EMake%20the%20cake:%20Preheat%20the%20oven%20to%20375%20degrees%20and%20prepare%20an%208-inch%20square%20baking%20pan%20(I%20brush%20the%20pan%20with%20Wilton%E2%80%99s%20Cake%20Release%20and%20place%20a%20square%20of%20greased%20parchment%20in%20the%20bottom%20to%20ensure%20the%20cake%20will%20come%20out%20clean.)%20In%20a%20medium%20saucepan%20over%20medium%20heat,%20bring%20the%20butter%20and%20water%20to%20a%20boil.%20In%20the%20meantime,%20in%20a%20separate%20large%20bowl,%20whisk%20together%20the%20cake%20flour,%20sugar,%20baking%20soda,%20salt,%20cinnamon,%20nutmeg,%20and%20cloves%20before%20mixing%20in%20the%20egg,%20sour%20cream,%20pumpkin,%20and%20molasses.%20While%20mixing,%20slowly%20pour%20in%20the%20boiling%20butter%20and%20water%20mixture.%20Mix%20to%20combine%20completely.%20Your%20batter%20will%20be%20very%20runny.%20Pour%20the%20batter%20into%20the%20prepared%20baking%20pan.%3C/p%3E%3Cp%3EBake%20at%20375%20degrees%20for%2020-23%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20with%20a%20few%20moist%20crumbs.%20Cool%20for%20about%2010%20minutes%20before%20gently%20poking%20holes%20in%20the%20cake%20with%20a%20fork.%20Sprinkle%20the%20rum%20over%20the%20top%20of%20the%20cake%20evenly%20and%20allow%20the%20cake%20to%20cool%20completely.%3C/p%3E%3Cp%3EMake%20the%20frosting:%20Immediately%20after%20leaving%20your%20cake%20to%20cool,%20start%20your%20frosting,%20since%20it%20will%20need%20cooling%20time%20as%20well.%20Heat%20the%20milk,%20flour,%20cinnamon,%20and%20granulated%20sugar%20together%20over%20medium%20heat,%20whisking%20constantly.%20Once%20it%20starts%20to%20boil,%20continue%20whisking%20and%20heating%20it%20for%20around%204-5%20minutes%20or%20until%20it%E2%80%99s%20very%20thick,%20like%20cake%20batter%20consistency.%20Remove%20the%20mixture%20from%20the%20heat%20and%20whisk%20in%20the%20maple%20syrup.%20Remove%20the%20mixture%20to%20a%20shallow%20pan%20and%20let%20it%20cool%20completely%20(it%E2%80%99s%20very%20important%20that%20it%E2%80%99s%20completely%20cool,%20or%20your%20frosting%20will%20be%20runny.%20I%20let%20the%20frosting%20mixture%20and%20the%20cake%20both%20cool%20for%20at%20least%202%20hours.)%3C/p%3E%3Cp%3EOnce%20the%20mixture%20is%20cool,%20beat%20the%20butter%20in%20the%20bowl%20of%20a%20stand%20mixer%20until%20soft%20and%20fluffy.%20Add%20the%20cooled%20flour%20mixture%20and%20beat%20on%20high%20until%20you%20have%20fluffy%20frosting%20the%20consistency%20of%20stiff%20whipped%20cream%20(this%20takes%20several%20minutes,%20so%20be%20patient).%20Frost%20your%20completely%20cooled%20cake%20and%20top%20with%20toasted%20pecans.%20Store%20leftover%20cake%20in%20an%20airtight%20container%20in%20the%20fridge,%20but%20be%20sure%20to%20let%20it%20sit%20out%20for%2030%20minutes%20before%20serving%20so%20the%20frosting%20can%20soften.%3C/p%3E){kind=link}
