Directions

  1. Heat the oil in a medium saucepan on a medium heat. Slice the garlic in fairly large pcs and add in to the oil, add in the sliced tomatoes. Saute/fry on mediun heat till soft. Add in the herbs and ginger. Saute/fry for a minute or possibly 2 longer. Add in a little water if it gets to dry. Add in sufficient warm water to fill the pot, 4-6 c. worth. Cover, bring to a boil, reduce to a simmer. Keep covered stirring occasionally to prevent sticking. Taste and add in a little healthy pinch of salt if you think it's needed 10 min or possibly so before serving. I left this simmering for about 3 hrs. I imagine it would be ready anywhere after about half an hour.
  2. This made a lovely brothy tomato soup.
  3. All the herbs were whole dry. I crumbled them into the pot as the onion and garlic were cooking. All the ingredients except for the garlic, extra virgin olive oil, ginger and water were homegrown and dry. Do not know if this will taste as good with store bought stuff. The dry tomatoes had no seasoning or possibly oil on them.
