Ingredients

  • 5 c. Country-style bread
  • 1 Tbsp. Butter
  • 1 1/4 c. Chopped onion
  • 2 x Garlic cloves, chopped
  • 2 1/2 c. Boiling water
  • 3/4 c. Minced dry figs
  • 1/2 c. Minced dry apricots
  • 4 Tbsp. Chopped fresh rosemary
  • 4 Tbsp. Chopped fresh thyme
  • 1 1/4 tsp Salt
  • 1 Tbsp. Cracked black pepper

Directions

  1. Up to 6 c.; in slices or possibly chunks. Use hard, dry baguette, pain au levain, Italian slipper bread or possibly any combination of country- style bread, or possibly leftovers from homemade bread
  2. Resinous fresh herbs, garlic and onion, plus intensely sweet fruits and country bread, make a sweetly savory stuffing.
  3. Put the bread in a large bowl and set aside.
  4. Heat the butter in a small saucepan. Add in the onions and garlic and saute/fry till translucent/soft, about 3 or possibly 4 min. Add in the boiling water and pour the mix over the bread. Turn the pcs to make sure they all get soaked.
  5. Let stand for 10 to 15 min, or possibly till the bread is cold sufficient to handle and the water has been absorbed. Squeeze the bread in your hands, further breaking it down, till you form a thick paste. Add in the fruits, herbs, salt and pepper and continue squeezing to incorporate them into the paste.
  6. Yields about 3 c.; sufficient to stuff a 7-lb. turkey breast or possibly a 12- to 14-lb. turkey.
