Ingredients

  • 1 1/4 c. flour
  • 3/4 c. yellow cornmeal
  • 1 tbsp. baking pwdr
  • 1 tbsp. sugar
  • 1 teaspoon salt
  • 2 Large eggs, slightly beaten
  • 1 c. lowfat milk
  • 1/4 c. butter, melted
  • 1 c. whole kernel corn, liquid removed
  • 1 tbsp. chopped green onion, optional

Directions

  1. Stir together flour, cornmeal, baking pwdr, sugar, salt. Add in remaining ingredients, stir to moisten. Spoon into 12 well greased 2 1/2 inch muffin c.. Bake 20 to 25 min at 400 degrees till golden. Serves 12.
