Ingredients
- 1 1/4 c. flour
- 3/4 c. yellow cornmeal
- 1 tbsp. baking pwdr
- 1 tbsp. sugar
- 1 teaspoon salt
- 2 Large eggs, slightly beaten
- 1 c. lowfat milk
- 1/4 c. butter, melted
- 1 c. whole kernel corn, liquid removed
- 1 tbsp. chopped green onion, optional
Directions
- Stir together flour, cornmeal, baking pwdr, sugar, salt. Add in remaining ingredients, stir to moisten. Spoon into 12 well greased 2 1/2 inch muffin c.. Bake 20 to 25 min at 400 degrees till golden. Serves 12.
