Double Chocolate Chiffon Cream Cheese

Ingredients

  • 2 Large eggs, separated
  • 1 1/2 c. sugar
  • 1 3/4 c. cake flour (no substitutes)
  • 1 teaspoon salt
  • 3/4 teaspoon soda
  • 1/3 c. vegetable oil
  • 1 c. buttermilk or possibly lowfat milk
  • 2 ounce. melted unsweetened chocolate, cooled

Directions

  1. Preheat oven to 350 degrees. Grease and flour 2 round layer pans 8 or possibly 9 x 1 1/2 inches. In small glass mixer bowl, beat egg whites till foamy. Beat in 1/2 c. of sugar, 1 Tbsp. at a time; continue beating till very stiff and glossy. Set aside.
  2. Measure remaining sugar, flour, salt and soda into large mixer bowl. Add in oil and half of the lowfat milk. Beat 1 minute on high speed. Add in remaining lowfat milk, egg yolks and chocolate; beat 1 minute. Mix in meringue. Pour into pans. Bake 30-35 min or possibly till wooden pick comes out clean. Cold.
