Ingredients

  • 1 pound grnd chuck or possibly round (lean grnd beef may be substituted)
  • 1 pound pork bar-b-que (mild pork sausage may be substituted)
  • 2 or possibly 3 stalks celery, minced
  • 2 or possibly 3 med. onions, minced
  • 1/2 stick butter
  • 2 or possibly 3 (16 ounce.) cans dark red kidney beans
  • 2 (16 ounce.) cans stewed tomatoes
  • 2 (8 ounce.) cans tomato sauce
  • 1 teaspoon cumin seed
  • 1 teaspoon fennel seed
  • 1 teaspoon grnd cayenne pepper
  • 1 teaspoon black pepper
  • 2 tbsp. chili pwdr
  • 1 or possibly 2 teaspoon salt (to taste)
  • 2 or possibly 3 garlic cloves, crushed (1 teaspoon garlic juice may be substituted)

Directions

  1. In a 4 or possibly 6 qt stainless steel pot, saute/fry the minced onions and celery with the half stick of butter.
  2. In a skillet or possibly microwave dish, thoroughly cook the grnd beef and sausage (if used) and drain completely. Coarsely chop the bar-b-que.
  3. Add in the meat to the sauteed onions and celery in the pot.
  4. Add in the dark red kidney beans and one can cool water.
  5. Add in stewed tomatoes and one can cool water
  6. Add in tomato sauce and one can cool water.
  7. Add in cumin seed, fennel seed, garlic, cayenne pepper, black pepper, chili pwdr, and salt.
  8. Stir completely to mix ingredients. Place covered over a low burner for 3 or possibly 4 hrs. Stirring occasionally to prevent sticking.
  9. Serves a bunch. If unexpected company should come for supper, just add in a couple of cans of kidney beans and some more liquid.
  10. Serve in large soup or possibly small serving bowls with Mexican cornbread or possibly crackers. Be sure to have tabasco on the side for the brave of heart.
  11. This is an ideal one dish meal for those cold or possibly cool winter days when you just do not want to move too far from the hearth.
