Ingredients
- 1 (20 ounce.) can Dole pineapple slices in juice
- 4 boneless-skinless chicken breasts in halves
- 2 teaspoon vegetable oil
- 2 lg. cloves garlic, pressed
- 1 teaspoon thyme, crumbled
- 1 tbsp. cornstarch
- 1/4 c. honey
- 1/4 c. Dijon mustard
Directions
- Drain pineapple; reserve juice. Sprinkle chicken with salt and pepper. Rub with garlic and thyme. Brown in warm oil in nonstick skillet. Combine 2 Tbsp. reserved juice with cornstarch. Combine honey and mustard; stir into skillet with remaining juice. Spoon sauce over chicken. Cover and simmer 15 min. Stir cornstarch mix into pan juices. Add in pineapple. Cook, stirring till sauce boils and thickens.
